Banana & Chocolate Bread


What do you do when you have ripe bananas and a bar of dark chocolate nobody really wants to eat, especially if you're one of those people who hate to throw away food? Yeah, you guessed it right! 
It's banana bread time!



I have to admit, I'm not the biggest fan of bananas. I will occasionally buy some to add some volume to my smoothies, but in general it's my other half who loves them and keeps replenishing the stock in the house. I'm more than OK with that, except for the times he buys more because the ones we have at home have only just started going ripe (we like our fruit semi-raw/crunchy in this house). That's when it comes down to me to use them up before they hit the trash bin. My go-to recipe? Banana bread!


This is one of the easiest recipes for anyone to follow, whether you're an amateur or an experienced cook. I'll quote my nan here and say that the way to make this taste above and beyond is if you put some "love" in it. Yes, she was the passionate cook in our family and it has rubbed on to me, making me want to be the one to carry her "title" and pass down that love to future generations. But I'm rambling here. Let's get to the recipe.


You will need:

  • 225gr self raising flour
  • 175gr caster sugar
  • 1 tsp baking powder
  • 2 eggs
  • 2 bananas
  • 100gr unsalted butter
  • chocolate chips (optional)


Preparation


There is a reason why I said this is the easiest recipe to follow! Mash your bananas well, then put all your ingredients except the chocolate chips in a bowl and mix well. Make sure your butter has been in room temperature so it's soft and easy to mix. When everything's combined together add the chocolate chips and fold them in with a wooden spoon. Place the mix in a loaf tin and put in the oven on 180C for an hour, until it gets golden brown.
